When it comes to sustainable fish, we like to think beyond the fillets. Cod cheek is a chef’s favourite, being boneless, skinless and firmer than the standard meat. A great example of utilising the whole fish, and brilliantly, these have been masterfully prepped by Celtic Coast, so they’re ready to go on your end. It makes for a versatile cut, that’s perfect for stir-fries and Thai curries. Our cod will come from both Icelandic and Norwegian Seas, it will be caught by longline, gill net, or demersal otter trawl, and will have an MCS rating of 1/2.
